Shigeto Kamada has been a fan of ramen since his days as a young men in Japan. Once he moved to NYC he could not find any good place where to eat the traditional stuff. Life took him back to Japan where he was able to research, study, learn. He took all his knowledge back to NYC and his shop was an immediate success. So much so that he had to open another one.
